INGREDIENTS
- 4 Medium size zucchini
- 1/2 Cup of olive oil
- 2 Large onions
- 1.5 Cups of walnut
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp soy sauce
STEPS
Cut the zucchini into cubes and place them in a bowl.
Generously sprinkle olive oil over the zucchini cubes and mix well to ensure they are evenly coated.
Spread the zucchini cubes on a lined baking pan.
Bake in the oven at 150°C (300°F) until browned, about 30-40 minutes.
Remove from the oven and let cool for about 20 minutes.
Prepare the Onions:
Cut the onions into strips.
Fry the onion strips in olive oil until they are nicely browned.
Once ready, let them cool for about 10 minutes.
Combine Ingredients:
In a food processor, combine the cooled zucchini, onions, walnuts, salt, pepper, and soy sauce. Pulse the mixture in short bursts to maintain a coarse texture.
Transfer the mixture to a serving plate.
Drizzle with olive oil and decorate as desired.
